Resumen
Las globulinas 11S son proteínas de almacenamiento o reserva con amplia distribución en una gran variedad de semillas y granos. La estructura cuaternaria, conformada por protómeros α-β, cuya subunidad ácida y subunidad básica están unidas por puentes disulfuro, explica muchas de las propiedades fisicoquímicas y tecnofuncionales, así como el condicionamiento de su comportamiento nutricional y el potencial para la generación de péptidos bioactivos. Esta revisión condensa el conocimiento disponible respecto al origen y diversidad de las globulinas 11S, así como los aspectos estructurales y su relación con la naturaleza fisicoquímica y funcional de dicha clase de proteínas y los métodos analíticos y computacionales para su estudio. Además de aplicaciones industriales y retos actuales en el panorama de investigación y el desarrollo alimentario.
